Tandoori Chicken
Chicken is eaten all over the world and there are countless ways to make dishes from this humble bird. My personal favourite is Tandoori chicken. This is a north Indian dish and is very famous in Punjab State of India.
Basically you need an earthen grill called Tandoor to make this chicken.
Indian Tandoor
Recipe
A classic Tandoori Chicken has to be marinated over night or at least 7 to 8 hours.
Ingredients:
1. 1 whole chicken , cut in to several pieces, remove all fat.
2. 3 tsp fresh lemon juice.
3. 1 cup yogurt plain.
4. 1 tsp garlic minced.
5. 1 tsp crushed ginger.
6. 1/2 tsp grounded cardamon.
7. 1/2 tsp pepper
8. 1 tsp grounded coriander.
9. 1/2 tsp cloves
10. salt to taste
11. Oil for brushing
12. fresh coriander for garnishing , finely cut.
13. slices of onions, cucumber and lemon to garnish.
Preparations:
First of all take chicken pieces and prick the flesh randomly and then with a very sharp knife make deep cuts in the flesh so as the marinade would go deep inside. Now put this chicken in a shallow dish.
now in a bowl put yogurt, lemon juice, garlic, cumin, ginger, ground coriander, pepper and salt. Mix them well and mix them till it is uniform. Now pour this over the chicken and rub it over the chicken many a times, turning chicken too. Cover and put it in refrigerator over night. It must be removed about 30 to 40 minutes before cooking.
Now prepare Tandoor and make it hot by burning charcoal or wood. Then pass iron rods through the chicken pieces. and when Tandoor is fully hot, put the chicken inside the tandoor. Keep a check on chicken and keep applying little bit of oil every few minutes. It should be ready in about 45 minutes.
Serve it with slices of onion, tomato, cucumber and lemon.
